Albedo pointed out the reasons last season. She suggested that lizard men may produce higher level undead than humans. It's also to test their war capabilities.

Late reply but hoping you still see this - however one point I would make regarding Overlord, is that unlike most anime (and media in general) there really isn't a concept of Good vs Evil in terms of people/beings. There's clearly acts that we would label as Good/Evil, however what I love about Overlord is that it's written in a way that shows that everyone feels what they are doing is at least justified, if not "Good". While the anime isn't the best at showing it, even the worst "evil" characters are generally acting in revenge, survival, etc. While many "good" actions, turn out to be manipulations in order for someone to get what they want, etc. So what makes Overlord great is that it isn't about good/evil - it's just a great show about everyone trying to survive and people mostly overreacting to what they fear about others.

at the end of the previous season they talk about creating undead from human corpses, but that since theyre human the undeads only reach lelvl40,but then albedo says that they found the lizarmen village, and plan to experiment if their corpses are stronger than humans when become undeads.
