Regarding your question about Ed’s leg, it didn’t come back because he originally lost it in the process of trying to bring back their mom. Because technically there’s no way to reverse it without using a philosophers stone, his leg did not come back when Al gave his soul for Ed’s arm to come back. Great reaction and can’t wait for more to come !

if ed was willing to use a philospher's stone to restore his leg when he got al back he could have, but now that his truth is gone, so is his leg. He can't get it back anymore because it doesn't exist.
