I'm a big fan of the Obliviax. It is a trap monster but it's got so much more potential for story than most of them.

It's one of those interesting monsters where it seems like the most interesting thing about it is something quite secondary to its design. Like, it seems obvious that the creators thought "yeah, yeah, but the really important thing is that it *steals your spells*."
