Fire benders have the sun (i.e. the giver of life itself), water benders have the moon (in other words, balance. That's why they talk about push and pull a lot, the flow of water), earth benders have that which is tangible (simply being grounded in the moment), and air benders have spirituality (freedom from a lack of attachment, hence why they are all monks). That isn't to say other elements, or just other people in general, can't be spiritual. Air benders simply have the highest affinity for spirituality because it pairs so well with their specific element.
