As a Military member I can tell you the Republic is styled around the 1940s era of military justice and customs. It wasn't uncommon for death sentences to be handed for deserters or especially mutineers although deserters by the 40s more commonly had their sentences reduced to imprisonment where they'd serve their remainder of their service in jail, in modern day we are able to disobey orders that are illegal, against the Rules of War, or immoral and executions have been largely outlawed. Although you can be convicted to death row for crimes such as rape and first degree murder. The last US soldier executed for desertion was Pvt. Eddie Slovik at the tail end of WWII. The last official charges of mutiny brought in US military courts was in 1970.

As @Giuseppe said it was common back in the day to soldiers be executed. And the world of star wars at least in the war environment was inspired heavily by ww1/2 cause thats all we have to draw inspiration from for this large of a scale war.
