It occurs to me that Granny Whitney arranging this fight has the added bonus of continuing to develop Rick as a fighter.

Yeah there is that, honestly Jack is just a hypocritical angry asshole. He didn't even bother to look into Rick's situation at all. If he did he would have found that Rick was just a pawn in a game between giants stuck in a shitty situation fighting for his family. Nothing was ever easily handed to Rick and it's not like he maimed the woman either. They simply fought and she lost, as terrible as being bankrupt is there are worse fates. If Jack really cared about his cousin he should have simply helped her pick back her life up. Like offering place to stay and getting another job but no he simply wants to maim Rick due to how much she is suffering. I don't know, his rage feels entirely unjustified to me unless his cousin committed suicide or something then I can see why he is so blinded by rage. Also looks like Lisa is still better over the fact that Rick chose Emily over her. Yeah... romance is tough it doesn't help that Rick didn't do so well smoothing out their relationship either. Understandably the guy has a lot on his plate to deal with but it looks like Rick just can't really catch a break can he.

Isn't assault illegal in this world? Can't Rick file charges with the police against Jack for assault? Even if the police cannot do anything without a credible witness, having the charges filed should at least provide some deterrence against Jack actually murdering Rick. Also, I thought Damian wanted to work with Rick. Jack certainly cannot win against both Rick and Damian. So all Rick has to do is only go out with Damian (or Emily).

This world evolved from the typical xianxia culture, so their legal definition of assault is much more limited than ours. You're right that Rick could potentially try to use the authorities as a deterrent, though he doesn't trust the authorities enough to think of that.

I just remembered that this is the third time that Jack has assaulted Rick. The first and second time Rick had Damian as a witness. And a lot of other witnesses for the second time (all the other surveying employees). Is that really not illegal at all? What about murder, is that illegal?

Murder is illegal, though not thoroughly investigated depending on the context. Similar to how the police will react differently to a shooting between gang members than to one that kills an innocent bystander. If Jack attacked a random person in the street, there would be consequences. But martial artists engaged in work that involves fighting monsters and each other, the police don't really consider that assault.

So it seems like all Rick has to do is get Damian or Emily (or both) to come with him and ambush and kill Jack, dispose of the body (feed it to some wild animals), and if anyone ever comes asking about it then Rick can say Jack attacked him and Rick managed to fight him off and some animals got Jack from behind.

Mildly. It's more bending the rules than breaking them, and many of the other competitors were doing the same in different ways.
