Yeah Hank is very agitated, because he doesn't wants to show weakness. So when everything is normal he is just the normal himself. But as soon as someone says that he seemes different since el paso, his mood shifts a lot. Which basically all started with Tuco, where he could've died, and that already was stressing him out. And then he goes to El Paso where he could've been seriously injured or could've died again. But yeah, like I said, he doesn't wants to show weakness, so he just keeps to himself which can't really help him to get over it. And in that case, he is really lucky that the Blue Meth popped up again, so that he has a reason not to go to el paso.

I think Walter got mad at jessie because of his pride and he already showed how much he hated other people profiting from his ideas. I would be mad if I was that smart and living as a high school teacher with minimal wage while my colleagues getting riches from my ideas.
