Losing ur head n thus ur brain means even tho ur not instantly killed you can't decide to heal ur head. That's why when the distance limit is exceeded and the soul is disconnected from the body/brain they can't just use magic to recreate their body. Since Mamis brain got destroyed, forcibly removing her souls ability to think so she couldn't just remake her head. Also If they could think/use magic as just a soul gem they wouldn't even rlly need bodies to fight witches

Soul gems become accessories when they transform and it just so happened that Mami's became a hair piece. If you look back when she gets her head bit off, they show her hair piece just shatter indicating that her soul gem is gone, hence why she died. The writers of this series were asked once in an interview if Mami would have survived if her soul gem was on another part of her body and they said that her head would just grown back as long as her gem was in tact.
