So its okay to be confused about how Eren knows how to bite his hand but instinct is the easy answer. I believe a character said "its as intuitive as us knowing how to use our limbs." if you want more of an explanation you can go back to when he first bit his hand against the cannon. His dad is talking in a flashback and it explains it a bit further. But instinct is the simpler answer.

As great as this season is i do concur that it is likely the worst. I think Season 1 and 2 are pretty close but I give the edge to Season 2. But we’ll just have to wait for a bit for your analysis lol

It is not about being the worst it is that this series is just that good. It is like fine wine that gets better in time because everything is connected. All your answers will be answered little by little. Trust the process. It is worthy. Avoid spoilers because the pay off is amazing.

The episode where Hanji talks to Eren all night about titans, Eren is explaining what happened when he blocked the cannon ball to the group and when he mentions that he bit his hand he suddenly has a realization where he thinks to himself "Wait a second, how do I even know this?" This is the only concrete mention of that so far. If you were to rewatch the cannon ball scene you would have an AH HA moment.

Eren says he knows to bite his hand in the same way someone knows how to move their arm. It's purely instinctual
