If Sidestep got captured by Hollow Ground, why didn't HG use their powers on Sidestep before letting Nocturne give Sidestep their sight back? Was HG just that sure their powers would work?

Yes, HG was that sure. Also, using their power takes effort and is not something done lightly. If Sidestep was deemed useless, there was no reason to expend that energy on someone soon dead.

Before Sidestep's first escape from the Farm, was Sidestep a lone operator, or did they work in a team when it came to missions?

I am planning to let people have a choice there.

If Sidestep saw the memory in HG's mind, can their relationship still change with HG in book 3 to a kinda friendly one?

Yes, it can.

What would happen to all of HG's red strings if they died?

They would dissolve on their own over the course of a day or two.

What did Ortega think was wrong with Sidestep before they discovered that they were a Re-Gene?

We will get into that in book three, but there are clues in book two. Ortega seems to speculate on some connection to Hollow Ground.

Sidestep knows many languages; were they programmed like this, or did they learn them organically? What accents do they have for the languages they speak? (If Sides is good at copying things, would they adopt a Mexican accent while being in Cali even if they had a non-Mexican accent?)

I have, once upon a time, made a long list of languages that Sidestep knows but has since then realized that would paint me into a corner if I needed more for future encounters, so this is NOT an exhaustive list, just things that I am certain of.

Sidestep knows many languages, probably fluent in around six or seven, and with working knowledge of more. It was a combination of 'programming' and practice, you can get core knowledge in there, but it needs to be used. Languages were taught on a need to know basis; if the mission required reading/scanning minds that might think in a different language, the effort was made to make Sidestep as efficient as possible. This also reflects some of the languages learned since they belonged to people the Farm was interested in.

A non-exhaustive list of languages Sidestep understands would be English, Spanish, Mandarin, Cantonese, Russian, Farsi, Arabic, and many more to various extents (feel free to have your Sidestep speak any language). Of these, English and Spanish are known to the Rangers, as Sidestep uses them frequently.

As for accents, that wasn't really part of the training, but as you say, Sidestep is good at mimicking, so they would probably adopt their accent to the people around them unless they found one they particularly liked. That I leave to headcanons.

What was the puppet-like before they turned into a vegetable?

You can learn some things in book two and might learn a lot in book three. So far, it is known that the Puppet went by the nickname "Ace" and was by all accounts a loner who didn't get close to people. Personality-wise they seemed quite abrasive, but I don't want to spoil things too much because it is a big part of book three.

Is Shroud able to eat regene's mind, or does it only works on humans? If she can, is there any "taste" difference? Does feeding on Re-Gene is uhhh less nutritious than feeding on an organic brain?

Shroud can eat ReGene minds. And yes, there is a taste difference. She would call them blander and less nutritious. Not at all as filling as what she prefers.
