So basically there are people that are able to draw in chaos, which is basically just another way of saying the source of magic. Another way to think of it is like The Force in Star Wars. Some people can feel it and others can't but it's always there. But while these "conduits" can draw it in and use it, like when Yennefer casually created a portal and teleported to that cave out of desperation, only some of them can properly channel and use it to effectively cast spells. All of that training they go through is their way of figuring out who is who. At the end, those three girls were determined to be "conduits" of chaos meaning that they could feel it and even use it but would never be able to properly master and control it, thus turning it into what the lore calls "order". The result of this is that those witches will almost certainly go mad over time and will become dangerous to themselves and those around them. So, to counter this, they are turned into just a pure conduit that can't use spells but can act as a sort of battery to keep chaos active for the proper witches to be able to go on using spells. Also, since you asked in the first episode, a "Witcher" is a human that spent their childhood learning how to fight and hunt monsters. When they reach a certain age they undergo a series of trials that involved potions and spells. Those trials are especially dangerous and it kills more students than not. But, those that survive are given enhanced strength, speed, and all around physical ability. It also allows to take potions that can offer other buffs that would kill regular humans. Geralt was a bit of an exception in that he proved to be quite resistant to those initial trials so he actually underwent FURTHER trials to further enhance his physical abilities. That is what turned his hair white and makes him instantly stand out to even other witchers. There is also a lot of prejudice towards witchers. They are seen as not much better than the actual monsters out there and are seen as freaks and mutants so are generally treated as a "necessary evil" of sorts. They kill monsters but are also seen as one themselves. There are other reasons but those will be explored in future episodes assuming you watch that much. Hope all this helps!

One of the things I love about this series (from the point of view of someone who never read the books or played the games) is the sense of confusion you have for the first few episodes while figuring things out. The more you watch, the more you get a sense of the sort of world it is. The GoT comparisons seem increasingly less apt the further you go.

Everything Chess Red Eagle said. Also, there are 3 stories going on at once. The Witcher Geralt, the Sorceress in training Yennifer, and the orphan child of some power Ciri. Witchers and graduated sorcerers go through the trials with magic and potions, and in addition to giving them enhanced respective powers, ...[self edited before posting]... That adds to the confusion. I don't think expanding on that last point is a spoiler. It is a very minor spoiler that is never properly explained and is needed to know to help understand and follow the show. I see its' exclusion of a proper explanation a fault of writing not a spoiler that ruins anything. I will post it if others concur. If not, then you will eventually work it out. FYI and unrelated, Geralt has some very limited magic, for example when he butchered those townspeople, you saw him use a limited force spell to push them back.

It isn’t just you. I watched the full season, still didn’t understand. Most likely because I didn’t know it existed before Netflix released it. No game knowledge and whatever else came first.
