Your version of Angel is the torrented version, that's why you experienced freezing and lagging during Angel S03E01. In the torrented version, Angel S3 episode 2 and episode 3 are out of place as you discovered when you watched them. I know this because I myself have this version with all 5 seasons. It probably won't happen again, I believe those are the only issues.

A thought about Kate changing her attitude towards Angel after he bit her. Maybe a vampire's bite is not just physical. Maybe some kind of mental/emotional/mystical connection occurs. That theory would include the possibility that it might be different for everybody.
