Should she have blonde longer hair and not the brown bobcut...? Shots from production shows her with the brown hair, so I'm not sure what to  do ;) Perhaps draw her as a more classic female Thor instead of what I think the movie will do...?

If we are keeping it accurate to the MCU, stick with what has leaked from the set, but if it changes you can always revisit this?

Both options sound good let's say the artist should do what he thinks is the best option!

Probably the best option is to do whatever reads best as what it’s supposed to be. Is it supposed to read as Female Thor or as Portman. Or maybe do a variant. Like with and without the costume. So short brown hair in one and a helmet and blonde hair in another.
