Emilia was raised by Puck, so Puck is her father figure. A role which Puck has accepted, so he calls Emilia his daughter. As for Subaru becoming a finger, it's not really explained why in the anime, but it's because Subaru has a high affinity with spirits which was mentioned in the episode and because Subaru doesn't have a contracted spirit of his own like Emilia and Julius. It makes him a candidate to be possessed by Petelgeuse, who is a spirit himself and survives by moving from body to body.
