In answer to your question about Satella and do we know... yes, for the most part, if and only if you have read the novels up to this point in the story. Unfortunately, the answers to some of your questions here were in cut content from season 1 during Arc 2 during his first week at the mansion and Arc 3 during all the stuff with the return to the capital and everything after that. Long story short, almost all of Subaru's interactions with Satella were cut from season 1 leaving her as much more of a mystery in the anime than she actually is to novel readers. This episode is, however, the first time Subaru has seen her face in both the anime and the novels.
