For most of your questions, I can't answer due to spoilers. What I will say is yes, you are correct that Subaru only shows his weak side to Rem. In Emilia's case, he simply doesn't want to show his weak side to the woman he loves. He only wants to show her the him that is his best. This is non-spoiler extra information for the Witch's Cult. There are only five Sin Archbishops. As we know from season one, the seat of Pride is currently vacant. The seat of Envy is Satella herself, so there is no Archbishop of Envy. To be clear, though, Satella herself is an object of worship and not a member of the Cult, which you can kind of tell from her interaction with Petelgeuse at the end of season one when he was inside Subaru.

So my theory at this point of the show was that Subaru is Envy and similarly to how The witch of envy ate all the other witches, he will kill all the other deadly sins and that will be the requirement for the Witch of envy to revive.

About the knife Subaru looked at, it's not in the anime but in the novel Subaru used the knife to try resetting again but it didn't work. When you watched the Bunny Girl Senpai movie you said "this was made by satan himself", I think that's more applicable to Re:Zero lol
