Wanda never had control over the boys. She created them, yes, but even as babies she couldn't control them. Remember when she tried to use magic to stop them from crying and make them go to sleep. They are autonomous beings, like every mother/child relationship, I suppose.

Since Wanda can create things out of nothing, everything she creates is real. She can get into your head and make you see things, yes, but when she creates something, it's real. Monica showed that with her clothing, outside of the hex, that Wanda completely rewrote reality with her clothes. So, those weren't an illusion. It's also how she can be off away from everyone and still have a cabin, food and even tea. She can create whatever she needs. Yep, cuh-RAZY powerful.
