We used the following ingredients:

Pastry

  • 220g white spelt flour
  • 35g icing sugar
  • Zest of 1 unwaxed lemon
  • 1 egg
  • Juice of 1/2 lemon
  • 125g butter

Filling

  • 45g cornflour
  • Zest of 2 lemons
  • Juice of 2 lemons
  • 125g caster sugar
  • 60g butter
  • 1 tbsp limoncello
  • 2 egg yolks

Meringue

  • 3 egg whites
  • 185g caster sugar
  • 1 tsp cornflour

I asked my friend if she was sad that her son was moving out of the family home and off to college. She said no, that God wisely created the teen years to help the parents rejoice at their departure! Loved your Classic Bakes segment!

I don’t know if you still have your wooden knitpicks wool winder, but I have one similar that started sticking. I was sent a small bottle of oil with it but no instructions. So I dripped it on all the moving parts and Voila!! It was like a new machine. I assume it’s a sewing machine fine type oil. Anyway, thought I’d mention it if you hadn’t tried this.
