When they said "Now we're spoiled for choice" she meant it cuz they were probably going to sacrifice Cassandra, but now that they have Vax they no longer need to sacrifice her. They got more choices than they did before, thereby they are spoiled for choice. At least, that is how I understood it.

Vex did bring up the idea of leaving the group earlier to Vax but it was more to the extent of questioning why they hadn't already because its normally they're go to as a duo, making her realize they're more attached to the group then she thought.

Hate to be that guy but it was vax who asked vex "why havent we?" and Vex looked at Scanlan being a dork and in that moment solidified her kinship with the whole group for the subtext there is that they're all family by that point. Each member has their own quirks but they all care deep down. Vex kinda shields herself expressing emotions based on her and her brother's past and is influenced by it heavily in her feelings.
