Of course, this is one of those other franchises whose release order differs from its chronological order... but given that its first chronological entry ("Hannibal Rising") is almost universally despised, I'll let you off the hook. "Red Dragon" is chronologically second, and the second best outing, IMO... so if you watch that before "Hannibal," I'll be fine with that.

I might also add, that it is originally a book series, and basicly a lot of movie adaptations were made, by different people, which were thought of as standalone movies. So yeah watching all of it is possible, even in chronological order, but that would feel like putting together a Frankenstein monster. Like you said putting the abysmal Hannibal Rising next to Silence of the Lambs feels almost like a crime.
