Lol, I feel the same way as you (it is also literally correct) in that, say, lizard tastes like, well, lizard, lol; not chicken. And I know you were just making a one-off quick comment. Anyway, I wanted to add that I do, do that sometimes, sort of. Basically, when I eat something more exotic that many people haven't had, and try to compare it's taste, I'll pick something more likely to be familiar. I must say, I've never once compared to chicken, though, lol. Usually it ends up a red meat comparison. Say, "similar to beef, but richer like duck, a bit velvety, and a little bit gamey (moose being something that has a fairly strong gamey taste, for those familiar)". Sometimes description of texture, etc... Never once actually found anything super similar to chicken though, lol. Much more stuff is much more similar to beef, but "it tastes like beef" is never the answer either lol, they are all at least a bit different. Which, as you said, is because they *are* different.

With the everything tastes like chicken, it's because most times it's just meat breaded and deep fried... In the same fryer chicken was fried in, not to mention what people love about fried chicken is the breading and skin, the meat itself is rather bland without seasonings.

As I said in my own response I think it is based on how the dish is prepared I've tried bear and deer and they tend toward beef and are served in similar ways. When I tried alligator, it was served similar to chicken strips, breaded and deep fried. Chicken and certain reptile meat seems on the bland side to me and absorbs flavors more effectively than red meat does.

I agree that chicken is good for absorbing flavours or being seasoned (it's so lean, almost no fat - assuming we are talking chicken breast meat). And certainly a good cut of beef steak prepared well, with no seasoning, etc. Will be much more flavourful on it's own. I do think that chicken breast (much less wings or thighs) just totally on it's own when prepared right can be very tasty and juicy/tender. It's also an individual thing, I'm sure.

Oh don't get me wrong chicken is probably my go to meat because of it's versatility. I eat poultry 7 out of 10 times lol. When you go out to eat chicken is cheaper lol
