Oh believe me... there's a lot of stuff that happens in the Star Wars Timeline, at least in Legends (The Expanded Universe that is no longer Canon) there are more than 20.000 years of history before the events of the movies, and there were definetely many Sith that existed before Sidious and Plagueis. Do not forget that the Jedi and the Sith are simply 2 organizations/philosophies that use and study the Force. However... the Force can be interpreted in many ways by other organizations and cultures who are not the Jedi and the Sith. What i mean by this is that Ahsoka's village and it's Elder do not see or feel the Force the same way the Jedi do. They do know about the Jedi... but the way they interpret the Force is very different. Dooku is a political idealist, he might have become a Sith but in truth he never gave himself fully to the Dark Side, you confirm this with the fact that Dooku never had the characteristic Yellow eyes that all the other Sith developed, like Vader, Maul and Palpatine. Dooku wanted to improve the lives of the people in the Galaxy and erradicate the Corruption that was already taking hold of the Republic, the problem was that he was the type of character that follows the idea of "The Goal jutifies the Means" and that's why he eventually decided to follow Palpatine (even tho he was also being manipulated, as Palps always does).

You were talking about the sith and jedi and the rule of two. Apologies if this was mentioned previously, but I would suggest you read the Darth Bane trilogy of books. I won't reveal what they entail but they are some of my favorite Star Wars novels. Unfortunately they are legends, however the character of Darth Bane is canon.
