I remember wrong but i recall reading some of the short author comics at the end of a volume of fma where the author jokes that she forgot if greed had ears in his full shield form and had to buy her own manga to check. while the reason for greed not using his full shield was probably to make him recognizable and to show emotion better i'll always believe she was afraid she might draw it wrong and wanted to check before doing so.

Anime trope commonly overlooked: writing the title only in kana is basically a flashing sign that says "I'm using this word, but it doesn't mean what you think it means, or means more than just what you think it means." We are not limiting this word to its literal definition. Instead of writing "sacrifices" the "normal" way as 人柱, it's just ひとばしら. In this episode, you could re-interpret the title for basically every major character, as you yourself pointed out: Fu, Buccaneer, or Riza in addition to the obvious ones. The same trope is used in Demon Slayer 1x19, "Hinokami:" writing it ヒノカミ to show how we don't yet know if it's God of Fire or God of the Sun. I'd mention it in other shows / movies, but I'd risk spoiling, and you get the idea. It happens a lot. (Just checked, but it won't happen in Haikyuu until 2x15, which is not some huge, epic moment, but the kana-title trope as "not what this word normally means" thing still applies.)
