As Wes said, alchemists can in theory work on any kind of element, their limiting factors are knowledge (they have to know the inside-outs of what they're working with on a chemical level) and a circle (different circles being used to different kind of transmutations). Since obviously, studying takes time, alchemists do tend to specialize, and state-alchemists, being expected to be in combat situation, tend to have items with pre-made circles (rather than drawing one on the spot), further specializing themselves. By seeing the Truth, Edward (and Alphonse and Izumi) got extra knowledge and ignores the need for a circle, meaning he can work with most materialswithout trouble (rock, wood and metal seemingly being his most common tools).
