The Sandler/Barrymore film you're referring to is "50 First Dates." The only problem with your idea of filming yourselves an explanation tape is, where are you gonna hide it when Michael reboots everything? They reset the entire town, so that's not an option, and after the second failure, Michael now checks inside Janet, so no hiding things inside her either.
