The Fifth refers to the Fifth Amendment of the Constitution. It says that a person cannot be forced to say anything that might get them in trouble with the law, telling a tale that reveals crimes they committed. At first there Hank took the Fifth because his version of the story incriminates him in his very illegal breaking and entering his fists into Jesse's face. So you plea the fifth if you don't want to testify against yourself with an officer asking you questions. There are other provisions in the Fifth Amendment, but in general parlance that is how regular people use it.
