Start with FATE/ZERO --> FATE/Unlimited Blade Works --> FATE/Heaven's Feel movies. After those you can decide if you want to watch more, but those 3 are the main ones to watch in that order.

I know why you suggesting that, but UBW better continues Zero than the older Fate Stay Night. I would argue that being stand alone anime, even if it a route in the game. And it's better for GOT who have no clue what Fate is and where it comes from.

If there is a "light" moment in Fate Zero I can't remember it. This show is very dark and I love every moment of it. Definitely in my top 3 together with AoT. It may be confusing for Fate series new viewer though.
