There are quite a few good romance anime that avoid the "will they, won't they" trope. Horimiya, Akagami No Shirayukihime (personal favorite, Yor's voice actress is the MC's voice), Recovery of an MMO Junkie, Wotakoi: Love is Hard for an Otaku... Just to name a few.

I'm honestly quite surprise you understood the ending on the first watch. This anime is still one of my favorite romance anime to this day, so the reaction has been very enjoyable to watch. You could search up youtube for the visual novel ending for the different chars. There's even a yasuko ending but all of it is rather long, so you can either breeze through or watch in your own time
