Nobara didn’t explode because Mahito was only able to have one touch. If you remember in season 1 Mahito was also able to touch Nanami but couldn’t transfigured him. I believe the short contact period limit the extent of Mahito control over the target and maybe in Nanami case his experience in controlling the cursed energy helped him in dodging the effect of the limited technique.
