There's some spoiler stuff about the homunculi I won't go into, but they all do fit their names, just maybe not their more colloquial uses. For example, Lust is physically sexy, but personality-wise better aligns with bloodlust, perhaps. The significance of the Hohenheim scenes is both to add his perspective to the scene where he leaves (showing Ed might be a little biased in his feelings towards dear old dad), and to show that Hohenheim is also aware of Father's plan, which prompts him leaving.

I've always interpreted Lust more as bloodlust in her character's actions and what excited her. Lust's appearance is just a nod to the other definition.
