The secrecy is because they think there are 'spies' within their forces - seems like they guessed the armored/colossal titans are humans after learning of Eren, then the situation where the captured titans were killed. The whole expedition seems to have secretly been a plan to lure out one of the human titans and try to capture them, so they had to keep it hidden from the masses as they are concerned that the titans would learn about it. They weren't aware of the female titan from what I can tell, they were probably expecting/hoping for the armored one.

There are reasons for what they're doing. Secondly, they used that noise grenade as a specific 'we're coming' to the trap ahead. There was a chance visual wouldn't work, so they went with a one shot auditory one to be sure.

They didn't really emphasis it , but they did mention the goal of the recon mission was to cache supplies along a route to make retaking the wall easier
