The minions do have a retconned back story in the prequel movie Minions, but it isn't as great as the original. Maybe worth a watch though, as the minions definitely steal the show here.

I think most people were fine with the minions in the first movie, but with the oversaturation in the other films and especially in the marketing, the novelty really started to wear off.
