Backstory on this recipe - Months ago, I was at a restaurant and I came across a salmon dish that came with an interesting succotash on the side. Now, when I was a kid, the word succotash just meant a bland mix of corn and beans at the school cafeteria. But this succotash was not that. It was packed full of flavor and it was the hero of the dish, outshining the salmon by far.

Since that day, I have wanted to do a succotash recipe. And so here we are.

This recipe is nowhere near what I had at that restaurant, but this version is meant to test the waters to see how using a succotash as the base of a recipe, instead of pasta, rice, potatoes, etc. will go over with  you all.

If I receive enough positive feedback on this one, I'll be sure to explore other variations like it with future meal prep recipes.

This was sooo good. Would it be possible to get more bean recipes? I have navy beans I'm cooking and would love more dried bean recipes cus they are so cheap and good for you
