First off, I want to wish you all an early Happy Thanksgiving!

Thanksgiving is just one day away, and so meal prep is probably the last thing on your mind. But, the show must go on!

With that being said, a lot of you have requested more sheet pan breakfast options, so hopefully this roasted red pepper omelet is a hit!

When I was making the red pepper and cottage cheese mixture, I tasted it and it was so delicious! I think it would go really well with a pasta, if somebody wants to try that and let me know how it turns out ;)

As we get closer to the end of 2023, I hope everybody is dedicated to continuing their health and fitness journey going into 2024. And of course, I hope my recipes continue to be helpful to you all!

I hope you all have a Happy Thanksgiving with friends, family, and of course, yummy food!

Remember, 10 years from now, you won't look back on Thanksgiving and remember what diet you were doing. You will look back and reminisce on the loving memories created with family and friends. So just be mindful of your portions, be present, enjoy every bite, don't eat to the point of discomfort, and have an amazing Thanksgiving!

I assume this is a half sheet pan? It is it made in a cookie sheet?

Mine came out runny. Is this normal? I even put it in longer than the baking instructions. I’m not a fan of runny eggs but checking to see if anyone else’s came out this way?

I did this, but used herbed goat cheese instead of MJ and 🤤

Is it just a standard size cookie sheet?

I think my blender blended too well. Mine came out really orange but still good but I think I would have liked the texture of the peppers but not with my blender 😂 next time I think I will chop a few instead of blending them all
