Do we have any ramen fans here? I hope so!

I'm excited about this recipe for a couple of reasons. One of which is because it's my very first recipe that uses a pork tenderloin. Tenderloins aren't the best for meal prep recipes because they sometimes get a little dry when reheating. So I thought something with lots of liquid would be a great opportunity to use it for the first time.

Another reason I'm excited is because this recipe is a demonstration of how you can use something that is viewed as "bad" by society, and turn it into a macro friendly meal. In this case, it's the packs of ramen noodles.

Ramen is a very versatile dish. So pretty much all of the veggies in this recipe can be swapped out with whatever you prefer and have access to. You can add things like shredded carrots, cabbage, water chestnuts, or even corn. Get creative!

I loved this! I’d love to see more pork tenderloin recipes! It’s so cheap in my area, and even if it’s a little dry I prefer the taste to chicken!
