This is one of my all time favorite foods from Thailand! I went with chicken only because it's a little cheaper than shrimp, but you can easily make the swap to fit your preference.

Hopefully the less common ingredients in this dish don't scare you away from trying it.

Please be sure to check the notes page for information on substitutions on a couple of the ingredients that may be harder to find. I was able to get pretty much everything from a local Asian market.

Next week's meal prep recipe will be less extensive with easier to find ingredients, I promise :)

This one wasn't our favorite - I think it's the tamarind that we didn't like? Not sure, but every other recipe we have tried we loved!

What brand of tamarin concentrate did you get? What I found on Amazon was waaaay darker and thicker than yours and a cup of it was…not good 🤣

I made this tonight and I liked it but I wonder what could be used instead of so much tamarind? How do they make it in the restaurants? It was a little sweet for me. Good but sweet.

You could probably cut the tamarind with a little chicken or beef broth.

How many calories do you use for a pound of uncooked chicken breast? I see a lot of different numbers on the internet.

I use 110 calories for 4 oz of raw chicken. I use 1.5 lbs in most of my recipes, which is 6 servings of 4 oz each. Depending on how much fat is left on the chicken breast it could be higher and between 120-160. I trim all the fat off mine so that it is as lean as possible since I'm just using it as a protein source. But typically you can just go by the number on the nutrition label if that's easier.

I made this and really loved the flavor, but I need a recommendation for rice noodles. I bought House of Thai brand, but they weren’t very good. Are rice sticks from the Asian grocery the same thing?
