I honestly think that the best thing about breakfast muffins is just how convenient they are on the go. Traditional eggs aren't the easiest things to eat while driving!

And with these muffins, you can make each day something different. Make some with cheddar cheese, some with pepper jack. Some with spinach, some with tomatoes. Makes each morning something different to look forward to.

These are really great reheated in the air fryer because the tater tot crisp up nicely!

How long would you reheat these for?

If you’re using a regular sized 12 count muffin tin and whole eggs, it takes about 10 eggs. I filled the cups to right below the top so they’d have room to expand

FYI these crisp up really well in the air fryer (3-5 mins) and that’s especially great if you’re a “I only need to read the recipe once” know it all kinda person like me 😬 and missed the 10 min crisp/pre bake step

I failed pretty hard making the cups.i think next time I'll do it as a casserole. Tastes great btw

Made this as a casserole, took a little longer to cook but came out perfect. I just cut it into 6 squares.

I like this recipe too. I will be doing this one again. My husband took some to work for breakfast.

I added 1/2 a slice of chopped turkey bacon to mine, adjusted the macros and what a perfect and filling breakfast! Fueled me for the morning!

Just made these! I had to do 2 batches since my oven is broken and can only use my toaster oven. Learn from my mistake…by batch 2, I was tired, I have been meal prepping for the past 5 hours. I completely forgot to toast up the tots before I put the toppings in. Second batch doesn’t look as good as the first, but that’s 100% my fault. I’m going to reheat them in the air fryer to see if that helps crisp it up a bit. Other than my mistake, these were very easy to make

If I make these, can you taste the liquid egg whites? Do they have an eggy consistency?
