It was not an animation mistake or lighting, Echidna's face IS different as confirmed from source material. This was supposed to be a reveal here in the anime (seeing her face). Remember that we did not see pre-graveyard Echinda's face in the Roswaal flashback.

Love your reactions! Can't wait for season 3 which is gonna have more info on Anime Japan 2024. I really recommend watching the other Re: Zero content like the chibi ones since they have included lots of lore and worldbuilding the anime didn't have.
