Trying to find symbolism in this anime is indeed the correct choice. There are often a huge amount of symbols and metaphors in the visuals, with certain objects depicted in different ways depending on what the story is trying to show in that moment. Lena's VA is Hasegawa Ikumi, so not Mikasa's VA (who is Ishikawa Yui). In my opinion one of the best things about this anime is its mature storytelling. It doesn't spend the 1st episode with infodump and lengthy explanations; it gives you only a limited amount of information, little by little, and then wants the viewers to connect the dots on their own. Which, in turn, also means that the viewer has to pay close attention to dialogues and visuals to avoid missing anything.

So happy that you started watching/reacting to 86! One of my absolute favorite anime/light novel series. And I think you will really enjoy it. The direction and production team of 86 put their heart and soul into this anime adaption, taking full advantage of the strengths of the anime medium. And by that, I mean there is a lot of visual symbolism integrated into the episodes that help to craft not just subtle foreshadowing but also tonal queues and some insight into various character's feelings or states of mind. Additionally, the OST is liberally used to enhance the watching experience which also means that the intro and outro have some level of impact to the overall viewing experience. You probably will not be able to pickup on everything...and that's completely fine. I've watched this show at least half a dozen times and I still find things I had not noticed on the previous viewings. And it really adds greater and greater value to this show for me XD. One thing I can suggest is to please take careful note of the dates when it is indicated on screen. It will greatly help! And to answer your question, most of the episodes end with a transition to the outro/ED and then back to a post-credits scene. Very important to keep this mind as there so many important scenes after the ED. Not every episode but the majority of them. I'm really looking forward to re-watching this masterpiece along with you :)

Vladilena Milizé, “Lena” is regarded as the best girl in 86 Eighty-Six. I find Her character arc the most intriguing & well fleshed out in this series.
