The horse thing was because Marin was saying "tasty" (umai) in a cutesy way that sounded more like the word for "horse" (uma). The subtitles translated it as "ta-hay-sty" which is probably a "hay is for horses" joke. And yes, Marin was trying to make omurice, but because the omelet broke Gojo assumed it was just regular fried rice.
