Wouldn't it be lovely if the other entries for sentient beings also had different societal arrangements for them rather than goblins = tribe that will nick your stuff? What about the polar goblins? They are fuzzy fellows who get around on skis and follow the migrating caribou, defending the herd from larger monsters, and only eating the weak or infirm animals.

I think this is an interesting point. In general, D&D has a tendency to make every example of this a completely new monster. So if you want polar bugbears, well, you can have Cryions instead!
