I actually don't feel like there's any need to memorise whole recipes! I think what's more important is having a bit of a list of quick and easy recipes to pick from, that's you're familiar enough with that it doesn't feel like a big stressful deal to make them - but in terms of actually memorising the steps, I don't feel like you need to do that. I have recipes that I've cooked probably 50 times that I still check back with the recipe for the order of things or cooking times and temperatures, however they're still very 'easy' and low stress since they're familiar.
