One of my closest friends on this planet is Erick Castro, one of the world's great craft cocktail bartenders, owner of the James Beard Award-nominated bar Polite Provisions, and an all-around great guy. We sat down to chat about his new documentary, what it's like to own businesses, and why alcohol is just so damn good.

I was in LA over the summer and made the drive to San Diego for a day just to go to Polite Provisions. It was completely worth it. The drinks were amazing and surprisingly cheap. "The Pride of Long Island" wasn't on the menu, but Elliott(?) still made it for me. I'd highly recommend it to anyone in the area.

I'm not even sure the rights would need to be bought; that name was Erick's brainchild. The other guys were never really interested in making that show or making it work, so maybe it'll work better with me. That said, I don't plan on pursuing it, though Erick and I are marinating on a documentary idea.

San Francisco is an eight hour drive from San Diego, so make sure to plan accordingly. =)

Jesus, I've lived in Louisville my entire life, hit or recommended to visitors every place you probably went when you were here, and I've never heard of this Heaven Hills White Label. Guess I'll be heading to the liquor store in a few.

Colin, you and Greg were the ones who introduced me to the fine establishment of Polite Provisions. And I will always be in your debt for it. I felt so dumb too because that place was quite literally 10 minutes away and I never knew about it until you recommended it. Now it’s one of my favorite places. I’ve met both Erick and Amelia there and they’re both fantastic people. I just have to avoid those delicious dirty fries (and scotch eggs) next door or I’ll gain 50 lbs before I know it!

Your friendship shows through on this. 😉 I agree with Erick that 'saving treasures' isn't what it's cracked up to be. Enjoy what you have! There's no time like the present. 😉 having known a bartender just about all my life (Jimmy Gallagher) U can attest to the fact that a great bartender does So much more than mix awesome drinks. They listen, empathize and 'know' you - even when they've just met you. Their skill set is amazing! When you walk in - you really should 'feel' like everybody knows your name. And finally Boiler Maker in NYC - fabulous from the Old fashioned to the fries. Now my mouth is watering . 😂 when I come out for a visit, maybe we can make our way down to 'Polite' in San Diego. 😉❤️ love you bud. Nice work. And say hi to Erick for me please?

Would you be able to post your favorite old fashioned recipe? Here in the Midwest, everything is a brandy old fashion, which is ok, but I love bourbon (Angel's Envy is my go to), so I'd love to try your version! Unfortunately, in a rural community, craft cocktails haven't really taken hold!

Sure! 2 oz. Bourbon Couple/few dashes of Angostura bitters Small dollop of simple syrup Mix with ice, then discard the ice Pour over ice (preferably one large cube) in glass Garnish with lemon twist
