Today we are going to learn how to play a creole classic from the bayou, Jambalaya, literally named after a classic creole dish... that is so much more than a meal! So, if you don't know what Jambalaya is it is creole dish, created in a way that only Louisiana could, mixing french and African cuisine in a uniquely southern American way. Traditionally, the meat is some kind of sausage, plus a smoked meat such as andouille, topped off with pork or chicken, and less common but it is out there, seafood instead of our pig or chicken, which would normally be crawfish or shrimp. The vegetables known as the "trinity" in Cajun cooking, that is onion, celery, and green bell pepper, youc can also find okra, carrots, tomatoes, chilis and garlic are also used. Now, that is what it is, but it is more than that in the south, it is like a Sancocho in Colombia or a BBQ in Texas, it is an event. The stew takes a long time to make and it traditionally, before you could get any type of vegetable that you wanted year round from the super market, it was also done at times of feast when it was time to pick the veggies or slaughter the animals. After browning and sautéing the meat and vegetables, rice is added with seasonings and broth, and the entire dish is cooked together until the rice is done and then the whole family is served, usually with some live music and the dancing and the drinking start. A lot of times with guitar and voice, with bigger groups adding a fiddle and a washboard.
When arranging this song I was surprised to learn that this is actually Hank Williams most covered song! I knew it was popular, but I would have thought of 3 or 4 other songs that would have been more popular than this one. Hank claims that he came up with the lyrics while listening to some creole friends talk about cooking food on a tour bus.
