Season 3 imo has higher highs and lower lows, it could have been better but its just not a great adaptation (especially last episode that crams an entire volume while skipping important details to focus on fanservice).

Isaac mentioned 'Demon King' resulting from the inversion of a sephiroth, this is also from the kabbalah, the tree of life in Judaism. The demon kings are the qliphoth, the polar opposites of the sephiroth (angels). Isaac also used the word "kingdom" which is related to Sandalphon.

You definitely want to watch the Kurumi Star Festival OVA for Season 2, which focuses almost exclusively on Kurumi and Shido. Don't count Kurumi out yet. She's a major player in making things happen for the entire show. If you're pressed for time, you can go straight into Season 3. After season 2, depending on you point of view, there's only 3 more girls left. They dropped major hints with Wescott recognizing Shido's appearance, as well as his pursuit of Tohka's inversion. Each faction has their own motives (DEM/AST, Ratotaskor, Tokisaki Kurumi herself, and the mysterious Phantom) that will continue to interact and intertwine more and more in future seasons, until the mysteries of the Spirits are revealed.

Season 1 was the most accurate season to the novels and had the best art, which is why you will hear novel readers complain about the later seasons. However since you are anime only, it makes sense you liked Season 2 more than Season 1 because the plot/story/characters do improve each season because of how each season directly builds on the previous seasons. This was the author's first major series so his writing also improved from book to book too!
