He doesn't need to grab more (Ores/crystals) as the deed he received from the jewelry merchant means he owns all of it. He uses the mine for stock to create other things to sell but the anime doesn't show this as much.

He couldn't taste anything up until this point because he had emotional damage that Raphtalia cured him of after the fight. So now he can taste things again. When you're really depressed things like taste and other good feelings can be muted. That's why some people don't respond well to help when they still feel the emotional pain. It's part of the "shell" you break people out of when you help them get over bad things in life.
