For the strength grading explanation at around 10-11min in, I think Ijichi was saying that if Grade 2 Sorcerers are expected to regularly beat Grade 2 Cursed Spirits, they must be a good deal stronger than them, making them closer to a Grade 1 Cursed Spirit in strength. So Sorcerers are roughly evenly matched with Cursed Spirits ~1 grade above, and can regularly beat Cursed Spirits of the same grade. But Special Grade Sorcerers and Cursed Spirits (like Sukuna and Gojo) are exception to the rule because their strength can't be categorised by the system.

So yeah, basically there are grades for both sorcerers and cursed spirits, but they are not equal. Sorcerers are graded based on what level of a curse can reliably beat. A second grade sorcerer can handle a second grade cursed spirit without problem because they are stronger. So if a second grade sorcerer decides to be evil, in terms of power they would be stronger than a second grade curse.

Grade 2 Sorcerer can beat a grade 2 curse, so grade 2 Sorcerer > grade 2 curse. A grade 2 curse is equal to grade 1 sorcerer.
