I think I mentioned in Orientations that Michelle has better vision as a sphinx, but yes, different mythical creatures have different senses than humans. The medallion spell that casts the human illusion also alters senses to be closer to a human's. Unturned or disguised mythical creatures might have slightly different senses than humans, but usually they're not incredibly out of the ordinary or else it'd be a lot easier to know who is unturned or not.
