I previously explored a small DOS-based computer designed to run the  display system in commercial kitchens and restaurants. You told me to  run Doom on it, so let's do exactly that.

Well that was fun. I loved the casual cadence of it all. One thing I'm still unclear about - how did it "magically" work all of a sudden? From drowning in Windows XP quicksand to suddenly "I found it, this will work on any device", what was the solution in the end?

Boot from DOS via USB, I guess! It kinda surprised me he went all the way through all the Windows options, though. I bet it was not just to try to run Doom but to see what the device was capable of, and to take a look to the hardware in a more friendly way. If they load, Windows OS are more friendly if you want to see what the device capabilities look like than to make a lot of trial and error with DOS drivers... such a dark world. Also, DOS didn’t have USB controllers to plug mice (not sure if there is a retro driver from later times), which is another reason to try to install a Windows version on it and it sounds like the most reasonable installation.
