If you remember in the Attack of the Clone film Master Yoda trained Jedi Younglings as a very early age. It was when Obi-wan needed help finding a planet. The younglings looked like they were only 4-7 years old. Yoda was training them with the same type of remote balls Luke used later on. I don't know for sure, I haven't heard or read officially, but from this I've assume Jedi younglings who all get trained as a group by 1 master are given lightsabers to train with, then once they mature enough they find they own crystals and make their own sabers. That's why they're already so good at using lightsabers after having only just built them.

Yes that is in fact Boba's ship the Slave 1. Last time we saw it, it was colored blue and blow up when Ahsoka and Aurra Sing fought after Boba was arrested by Plo Koon.

Red is dark side color for lightsabers because to get red you need to meditate on the crystal and pour all your hate and anger into the crystal. It's a process called bleeding now in Disney canon.

Further to Sith lightsaber construction, by tradition, the crystal for a Sith saber must be taken from the lightsaber of a Jedi you've killed.
